CAPPUCCINO MUFFINS
2 Tbsp. instant coffee (vanilla roast)
1 c. milk
½ c. butter, melted
1 egg, beaten
1 tsp. vanilla
2 c. flour
¾ c. sugar
2 ½ tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
¾ c. chocolate chips
Espresso Spread:
4 oz. cream cheese, softened
1 Tbsp. sugar
½ tsp. instant coffee granules
½ tsp vanilla
½ c. chocolate chips
Mix coffee and milk until dissolved. Add butter, egg and vanilla. Mix well. Add remaining ingredients. Bake at 350° for 15 minutes. Serve with spread. Yield: 14 muffins.
